While it's true that the human diet requires meat for certain proteins, fats etc that cannot be taken from plants, the meat and dairy industry is cruel and should be reformed to more humane methods of farming. That's not to say that soy farms aren't also damaging to the environment.

I think we need to prioritize healthy diets above sustainability because many diets that people choose to be sustainable have a negative impact on their health

I think that in a sense it matters but in all honesty I think that in the whole aspect of things the stuff we eat doesn't change a thing.
